This is a lesser known blue cheese made at Ticklemore dairy in Totnes, using locally sourced goat's milk. Harbourne Blue is made to a Roquefort recipe, but using goat's milk (rather than ewe's milk, as is the French tradition) makes for a very different cheese. The taste can vary depending on batch and age -young cheeses are quite mild with a clean fresh taste, crumbly texture and sometimes sweet & floral notes. The flavour develops and gets stronger as it ages.
