Located on the northern edge of the Montagne de Reims in the Grand Cru village, Verzenay, Sebastien Mouzon is the latest in a unbroken family of winemakers stretching back to the 1770s.
On taking over in 2008, Sebastien started biodynamic conversion, and more significantly he is one of the pioneers of integrating agroforestry into his vineyards; planting more than 700 trees and 300 aromatic shrubs in amongst the vines. Sheep and chickens are used for winter grazing of the grass, with horses used for ploughing in summer. Seb has also built bat and bird nests/roosts across his vineyards to encourage natural predation of unwanted pests as opposed to reverting to the regoinal norm of spraying pesticides.
In the cellar all primary ferments are completes by the natural yeast of the grapes in a pied de cuve. The still wines are then aged in 3-15 year old barrels on the full lees for 7-24 months. Secondary fermentation is sparked with the addition of biodynamic champagne yeast supplied by Fleury, achieving a gentler pressure to the fizz of 5 bar rather than the usual 6.
L'Angelique is a Blanc de Blancs 100% Chardonnay presenting an elegant, rich and deep character with a balanced bitter twang at the end of the palette that brings you back for more. Extra Brut (1.5g/l dosage). Disgorged October 2022.

Unfortunately from time to time wines or ciders may arrive out of condition, usually due to defective closures or any number of possible naturally occurring faults. If you find a bottle where you believe this is the case please contact us immediately.
You may wish to cancel your order for whatever reason after it arrives. In which case you may do so within 7 working days from receiving the order, provided the bottles are unopened, intact and in their original packaging (which must still be in its original condition). Once the goods are collected and inspected, we will reimburse you for the cost of the product minus a surcharge for collection. If you fail to make the goods available for collection within 14 days of cancellation, you will be deemed to have accepted the goods.
